one all black and the other black and white, which goes to the black and which goes to white from house wiring

First, neither of them should be connected to a neutral (typically white) conductor. If what you seeing in the wall junction box is one white and one black, that is a switch leg. One of the conductors sends power to the box, the other will return it to the j-box in the ceiling. Determine which wire is live, this wire connects to the black/white switch wire. It might be obvious from the wiring in the ceiling j-box, but it is safest to check with a volt meter or voltage sensor.
A replacement switch costs about $ 70, so be sure of the wiring and turn power off to the circuit before connecting the switch.

ps- the white wire should be wrapped with black ( or any color except green or white) electrical tape to indicate that is a live conductor, at both junction boxes.
If your "fan" switch controls the light and vice-versa, post that and I'll tell you what to do.
